Mashbill: 75% corn, 21% rye, 4% malted barley


Barrel char: 4


Nose 👃: Sugar cookie. Toffee. Vanilla. Black cherry. Nutmeg. Dark chocolate


Palate 👅: Vanilla. Lemon candy. Black cherry. Butterscotch. Honey. Black pepper. Oily mouthfeel.


Finish 🏁: Honey.  Cinnamon Red Hots.  Sage. Dark chocolate. Long in length.


I really enjoyed the 6 year Doc Holliday, but the extra year definitely raises the bar.  Excellent bourbon comes out of Indiana… and this 7 year is a fantastic example.  If you want a well-chosen barrel from Indiana… Doc Holliday is your Huckleberry… or huckle-bearer.
